I would like to how big are the layers at 300dpi (for printing) and how big can I write? I was thinking to use this for some signs 24×36″ or 27×40″, will it works? how will be the quality once printed?

Thank you so much for reaching out to us, rest assured I can certainly help!
The great news is that 300dpi is a standard high definition size for graphics so with the sizes of the signs that you are looking to create at 24×36″ or 27×40″ should be fine, and you should not lose any quality of these graphics.
I would actually suggest using Illustrator for your particular project as Photoshop can sometimes cause pixelation when enlarging images so Illustrator should give you the best results for this.
